HOW TO MAKE VEGAN PUMPKIN CHOWDER
- Pre-cook pumpkin (how to cut, peel and cook pumpkin recipe could be found here).
- Add olive oil to a heavy pot over a medium heat.
- Add Onion, celery, sage, salt and pepper. Cook for 5 minutes.
- Stir in potatoes, cover and cook for 5 minutes.
- Add vegetable broth. Reduce the heat and cook for 15 minutes.
- Working in batches, puree pumpkin in a blender.
- Pour to the pot with the rest of the ingredients and simmer for 5 minutes. Season with salt and pepper.
