Crushed tomatoes (canned)
Vegetable broth
Onion
Garlic
Basil
Rice
Coconut milk (canned)
HOW TO MAKE TOMATO BISQUE
- In a saucepan, add olive oil, onion and garlic and sauce until softened.
- Add the broth and rice, and bring to boil.
- Reduce the heat to low, cover, and cook until rice is soft.
- Add the tomatoes and basil. Cover and simmer for 10 minutes. Remove from the heat and let cool slightly.
- Puree in the blender until smooth. Whisk in coconut milk, salt and pepper.
