HOW TO MAKE GLAZED POTATO SALAD
- Preheat the oven. Line a baking sheet with a parchment paper.
- In a small bowl, mix together olive oil, sesame oil, cane sugar, salt, turmeric, curry powder, smoked paprika and black pepper.
- Cut potatoes into cubes. Add the olive oil mixture and stir to coat well. Place potatoes cubes in a single layer on the baking sheet. Bake for 15-20 minutes until ready and golden brown.
- Chop cucumbers, scallions and spinach. Add to the bowl with the dressing and toss to coat.
- Top with the potato cubes and pecans. Sprinkle vegan cheese (optional) and serve.

Potato Baking Glaze
- 1/2 tbsp olive oil
- 1/2 tbsp sesame oil
- 1 tsp cane sugar
- 1/4 tsp salt

Salad
