VEGAN SPANAKORIZO INGREDIENTS
Rice
Spinach
Red bell pepper
Peas
Onion
Vegan butter
Vegetable broth
Vegan sausage(optional)
HOW TO MAKE SPINACH RICE
- Wash the rice and drain.
- Cut the spinach into julienne slices.
- Chop the onion and dice the pepper.
- Melt the butter in a pot. Add onions.
- Add the rice and stir until it absorbed the butter.
- Add the spinach, peas and bell pepper.
- Pour the broth, bring to a boil and cover with the lid.
- Turn the heat down and simmer for 20 minutes (the rice should absorb the liquid).
- Season with salt and pepper. Garnish with vegan sausage.
