This colorful Vegan Spanakorizo or Spinach rice is delicious alongside green salad. Bell pepper and peas add depth to the rice and vegan sausages contributes richness.

VEGAN SPANAKORIZO INGREDIENTS 

Rice 

Spinach 

Red bell pepper 

Peas 

Onion 

Vegan butter 

Vegetable broth 

Vegan sausage(optional)

HOW TO MAKE SPINACH RICE 

  1. Wash the rice and drain. 
  2. Cut the spinach into julienne slices. 
  3. Chop the onion and dice the pepper. 
  4. Melt the butter in a pot. Add onions. 
  5. Add the rice and stir until it absorbed the butter. 
  6. Add the spinach, peas and bell pepper.
  7. Pour the broth, bring to a boil and cover with the lid.
  8. Turn the heat down and simmer for 20 minutes (the rice should absorb the liquid).
  9. Season with salt and pepper. Garnish with vegan sausage.

  • 1/4 cup peas
  • 1/2 cup spinach
