This delicious version of simple vegan fried rice leaves out chicken and eggs and replaces it with peas, corn and sauce.

VEGAN FIED RICE INGREDIENTS
Rice: jasmine rice (cooked)
Frozen peas and corn: thaw and drain well

Sauce: vegan oyster sauce, tamari sauce, cane sugar, salt and
HOW TO MAKE SIMPLE FRIED RICE
- To make the sauce: in a bowl, mix together all of the ingredients and reserve.
- Heat a skillet (with grape seed oil), add ginger and garlic and stir briefly.
- Add the shallots, lower the heat to medium and cook for 2 minutes.
- Add the peas and corn, raise the heat to high, and stir and cook for 3 minutes.
- Add the rice, stir to mix and cook for 3 minutes.
- Stir the sauce, and drizzle over the rice. Stir constantly for 3-5 minutes, until the rice is evenly coated with sauce.
- Turn off the heat, transfer to a dish, and serve.
