VEGAN VICHYSSOISE INGREDIENTS
Potato: russet potato
Leek
Zucchini
Coconut cream
Vegan butter
Vegetable broth
Salt and pepper (to taste)
HOW TO MAKE EASY VICHYSSOISE
- In a pot, melt the butter over a medium heat.
- Add chopped potatoes, leek and zucchini, stirring occasionally for 5 minutes.
- Add the broth and bring to a boil.
- Reduce the heat and simmer for 20 minutes. Let cool slightly.
- Puree the soup in a blender. Return to the pot. Add coconut cream and simmer over a low heat for 2-3 minutes.
- Season with salt and pepper.
