Cantaloupe: melon packed with nutrients (beta-carotene, vitamin C, folate) (resource).

Vegan yogurt

Mint: fresh mint

HOW TO MAKE CHILLED CANTALOUPE SOUP

  1. Peel and cube cantaloupe.
  2. In a blender, combine cantaloupe, vegan yogurt and fresh mint and puree until smooth.
  3. Pour into bowl. Serve, garnished with mint.

  • Depending on types of yogurt used (sugar-free or with sugar) you might need to add sweetener (agave, maple syrup or cane sugar)
