HOW TO MAKE VEGAN COUNTRY-STYLE SOUP
- On a cutting board, cut all the vegetables (onion, carrots, spinach, turnips and celery).
- In a large saucepan melt 3 tbsp of vegan butter, add onions and leek, cook to soften.
- Add the carrots, celery, spinach and cook, until vegetables have softened.
- Pour bowling water (add vegan vegetable broth, salt and pepper) into the pot and cook, covered for 30 minutes (over medium heat).

- You can substitute vegan butter with any neutral-taste oil
- You can use cabbage instead of spinach
- Garnish ready soup with toasted bread

- 1/4 bulb onion
- 1 leek
