These French Country-style Vegetable Soup (or Soupe paysanne) is easy to make, vegan, dairy-free vegetable soup.

Ingredients
 
 

  • 6 cups water
  • 1/4 bulb onion
  • 1 leek
  • 2 carrots
  • 1 stalk celery
  • 2 small turnips
  • 1/2 cup spinach (chopped)
  • 3 tbsp vegan butter
  • 1 tbsp vegan vegetable broth
  • salt and pepper (to taste)

Instructions
 

  • On a cutting board, cut all the vegetables (onion, carrots, spinach, turnips and celery) into julienne strips.
  • In a large saucepan melt 3 tbsp of vegan butter, add onions and leek, cook to soften.
  • Add the carrots, celery, spinach and cook, until vegetables have softened.
  • Pour bowling water (add vegan vegetable broth, salt and pepper) into the pot and cook, covered for 30 minutes (over medium heat).
