These French Country-style Vegetable Soup (or Soupe paysanne) is easy to make, vegan, dairy-free vegetable soup.

- 6 cups water
- 1/4 bulb onion
- 1 leek
- 2 carrots
- 1 stalk celery
- 2 small turnips
- 1/2 cup spinach (chopped)
- 3 tbsp vegan butter
- 1 tbsp vegan vegetable broth
- salt and pepper (to taste)
On a cutting board, cut all the vegetables (onion, carrots, spinach, turnips and celery) into julienne strips.
In a large saucepan melt 3 tbsp of vegan butter, add onions and leek, cook to soften.
Add the carrots, celery, spinach and cook, until vegetables have softened.
Pour bowling water (add vegan vegetable broth, salt and pepper) into the pot and cook, covered for 30 minutes (over medium heat).
