VEGAN SWEDISH MEATBALLS INGREDIENTS
Chickpeas: home cooked or store-bought
Vegan Swedish meatballs
- 1 cup chickpeas (cooked)
- 1/4 bulb onion
- 1/4 cup mushroom
- 1 clove garlic
- 1/4 cup breadcrumbs
- 2 tbsp flour
- 1/4 cup aquafaba
- 1/4 cup quick oats
- 1/4 tsp allspice
- 1 tbsp vegetable broth powder
- black pepper
- Add mushrooms, garlic and onion to a food processor. Pulse until finely chopped. Add mushroom mixture to a skillet (heated over a medium heat).
- Transfer mushroom mixture and the rest of ingredeints to a food processor. Pulse untill finely chopped.
- Preheat the oven 365F.
- Add (whipped to a stiff peaks) aquafaba to a meatball mixture and mix.
- Bake 365F 25-30min.
