WHAT IS UMAMI FLAVOR?
Umami (also known as monosodium glutamate), means “essence of deliciousness” in Japanese, is one of the core essentials fifth taste including sweet, sour, bitter and salty (source).
EASY VEGAN RAMEN NOODLES RECIPE
This vegan ramen is a recipe made of simple ingredients. It is almost one bowl dish.
HOMEMADE RAMEN SEASONING
Homemade ramen seasoning is easy to make, you will need just couple of ingredients. All you need is onion, garlic, vegetable broth, umami seasoning or miso paste, dry mushroom powder and soy sauce.
HOW TO MAKE HOMEMADE RAMEN:
Ok. So, we could divide recipe into three parts: cooking bok choy, preparing broth and assembling soup.
Bok choy could be prepared many ways but for these recipe we will make a quick stir-fry with sesame oil, garlic, ginger and splash of water.
The broth is an essential part of the whole ramen. We will add shiitake mushroom, sry mushroom powder, umami seasoning, soy sauce and vegetable broth.
About tofu: I would suggest to go with a firm or medium firm. It will compliment the broth and whole dish.

Easy Vegan Ramen
Ingredients
Soup
- 500 ml vegetable broth
- 1/2 block tofu
- 5 fresh shiitake
- 1 pack ramen noodles
- 1 tsp dry mushroom powder
- 1 tsp umami seasoning
- 1 tbsp soy sauce
Bok Choy
- 4 bok choy
- 1 tbsp sesame oil
- 2 cloves garlic
Instructions
Bok choy
- In a large skillet over a high heat add all ingredeints and fry for 5-10min.
Broth
- In a large pot over a medium heat, add vegetable broth, soy sauce, shiitake mushroom (prior cooked), dry mushroom powder and umami seasoning. Cover and let simmer for 10 minutes.
- Add ramen noodles and let it boil for 2-3 minutes.
- Serve it with tofu (cubed),cooked bok choy and cilanto.
