HOW TO MAKE RATATOUILLE SOUP
- In a pot, warm olive oil. Add garlic, onion and saute for 3 minutes.
- Add the zucchini, eggplant, bell pepper and cook for 10 minutes.
- Add the tomatoes, reduce heat and simmer for 15 minutes.
- Add the vegetable broth and cook for 5-10 minutes. Season with salt and pepper to taste. Blend before serving.
