- 1 eggplant
- 1 zucchini
- 1 bell pepper
- 2 tomatoes
- 1/4 bulb onion
- 2 cloves garlic
- 2 tbsp olive oil
- 3 cups vegetable broth
- salt and pepper
- fresh basil (optional)
In a pot, warm olive oil. Add garlic, onion and saute for 3 minutes.
Add the zucchini, eggplant, bell pepper and cook for 10 minutes.
Add the tomatoes, reduce heat and simmer for 15 minutes.Add the vegetable broth and cook for 5-10 minutes.
Season with salt and pepper to taste. Blend before serving.
