This Easy Vegan Ramen is a delicious soup filled with ramen noodles, shiitake mushrooms, tofu and umami flavor. It is made of simple ingredients and comes in less than 30 minutes!

Ingredients
  

Soup

  • 500 ml vegetable broth
  • 1/2 block tofu
  • 5 fresh shiitake
  • 1 pack ramen noodles
  • 1 tsp dry mushroom powder
  • 1 tsp umami seasoning
  • 1 tbsp soy sauce

Bok Choy

  • 4 bok choy
  • 1 tbsp sesame oil
  • 2 cloves garlic

Instructions
 

Bok choy

  • In a large skillet over a high heat add all ingredeints and fry for 5-10min.

Broth

  • In a large pot over a medium heat, add vegetable broth, soy sauce, shiitake mushroom (prior cooked), dry mushroom powder and umami seasoning. Cover and let simmer for 10 minutes.
  • Add ramen noodles and let it boil for 2-3 minutes.
  • Serve it with tofu (cubed),cooked bok choy and cilanto.
