Easy Vichyssoise soup

Vichyssoise is traditionally a cold potato soup, but this light vegan version includes zucchini and coconut cream and can be served cold or hot.

Ingredients
 
 

  • 1 tbsp vegan butter
  • 1 leek
  • 2 medium russet potato
  • 1 medium zucchini
  • 3 cups vegetable broth
  • 1/2 cup coconut cream
  • salt and pepper

Instructions
 

  • In a pot, melt the butter over a medium heat.Add chopped potatoes, leek and zucchini, stirring occasionally for 5 minutes.
  • Add the broth and bring to a boil.Reduce the heat and simmer for 20 minutes. Let cool slightly.
  • Puree the soup in a blender. Return to the pot. Add coconut cream and simmer over a low heat for 2-3 minutes. 
  • Season with salt and pepper.
