Vichyssoise is traditionally a cold potato soup, but this light vegan version includes zucchini and coconut cream and can be served cold or hot.

- 1 tbsp vegan butter
- 1 leek
- 2 medium russet potato
- 1 medium zucchini
- 3 cups vegetable broth
- 1/2 cup coconut cream
- salt and pepper
In a pot, melt the butter over a medium heat.Add chopped potatoes, leek and zucchini, stirring occasionally for 5 minutes.
Add the broth and bring to a boil.Reduce the heat and simmer for 20 minutes. Let cool slightly.
Puree the soup in a blender. Return to the pot. Add coconut cream and simmer over a low heat for 2-3 minutes.
Season with salt and pepper.
