HEALTHY BARLEY SOUP INGREDIENTS
Pearl barley
Mushrooms: dried
Yellow sweet onion
Potatoes
Vegetable broth
White vine (optional)
Olive oil
HOW TO MAKE BARLEY SOUP
- Soak mushrooms for 30 minutes in water. Drain and chop.
- In a separate bowl soak pearl barley for 30 minutes in water.
- Wash, clean and chop potatoes.
- In a large pot, warm the oil. Add chopped onion. Saute for 5 minutes.
- Add chopped mushrooms. Saute for 5 minutes.
- Add white vine (optional). Saute for 10 minutes.
- Add vegetable broth, barley and mushrooms.
- Cover and simmer for 20 minutes.
- Remove from heat and let cool slightly. Season with salt and pepper.
