HOW TO MAKE RED LENTIL SOUP
- In a large pot, add olive oil, onion, garlic and saute for 5 minutes.
- Add lentil, carrot (chopped), parsley (chopped) and broth.
- Season with salt and pepper. Bring to a boil, reduce the heat, cover and cook for 20 minutes.
- Remove from heat. Add vegan cream. Serve. Garnish it with fried onion (optional).
