Red lentils cook more quickly than other varieties which makes it ideal ingredient for soups. You can also add fried onion to each serving, if you like.

Ingredients
 
 

  • 1 cup red lentil
  • 1/4 bulb onion chopped
  • 2 cloves garlic chopped
  • 1 carrot chopped
  • 1 cup vegan cream
  • 1 tbsp olive oil
  • 1/4 bunch parsley chopped
  • 4 cups vegetable broth
  • salt and pepper (to taste)
  • fried onion (optional)

Instructions
 

  •  In a large pot, add olive oil, onion, garlic and saute for 5 minutes. 
  • Add lentil, carrot (chopped), parsley (chopped) and broth.Season with salt and pepper. Bring to a boil, reduce the heat, cover and cook for 20 minutes.
  • Remove from heat. Add vegan cream. Serve. Garnish it with fried onion (optional).
