Red lentils cook more quickly than other varieties which makes it ideal ingredient for soups. You can also add fried onion to each serving, if you like.
In a large pot, add olive oil, onion, garlic and saute for 5 minutes.
Add lentil, carrot (chopped), parsley (chopped) and broth.Season with salt and pepper. Bring to a boil, reduce the heat, cover and cook for 20 minutes.
Remove from heat. Add vegan cream. Serve. Garnish it with fried onion (optional).
