VEGAN MEATBALLS INGREDIENTS
Rice: jasmine rice
Chickpeas
Tomato sauce: homemade tomato sauce recipe could be found here
Nutritional yeast
Oats
Nuts: pecans or walnuts
Onion
Garlic
Dried thyme and sage
Soy sauce
Dijon mustard
Salt and pepper
Breadcrumbs
HOW TO MAKE VEGAN MEATBALLS
- Heat a skillet over a medium heat and cook onions and garlic.
- Put oats and nuts into a food processor and pulse until the are finely minced. Add chickpeas, onion and garlic, and pulse until they mixed together.
- Add the rice and mix well. Mix in tomato sauce, soy sauce, nutritional yeast, dijon mustard and dried herbs.
- Form the mixture into a meatballs using a ice cream scoop.
- Sprinkle breadcrumbs on the top.
- Bake 20-25 minutes (365F) until browned.
