This colorful Vegan Spanakorizo or Spinach rice is delicious alongside green salad. Bell pepper and peas add depth to the rice and vegan sausages contributes richness.

Ingredients
 
 

  • 1 cup rice
  • 1 tbsp vegan butter
  • 1/4 bulb onion
  • 1/4 red bell pepper
  • 1/4 cup peas
  • 1/2 cup spinach
  • 2 1/2 cup vegetable broth
  • 2 vegan sausage (optional)

Instructions
 

  •  Wash the rice and drain. Cut the spinach into julienne slices. Chop the onion and dice the pepper. 
  • Melt the butter in a pot. Add onions. Add the rice and stir until it absorbed the butter. Add the spinach, peas and bell pepper.
  • Pour the broth, bring to a boil and cover with the lid.Turn the heat down and simmer for 20 minutes (the rice should absorb the liquid).
  • Season with salt and pepper. Garnish with vegan sausage.
