This colorful Vegan Spanakorizo or Spinach rice is delicious alongside green salad. Bell pepper and peas add depth to the rice and vegan sausages contributes richness.

1 cup rice 1 tbsp vegan butter 1/4 bulb onion 1/4 red bell pepper 1/4 cup peas 1/2 cup spinach 2 1/2 cup vegetable broth 2 vegan sausage (optional)
Wash the rice and drain. Cut the spinach into julienne slices. Chop the onion and dice the pepper.
Melt the butter in a pot. Add onions. Add the rice and stir until it absorbed the butter. Add the spinach, peas and bell pepper.
Pour the broth, bring to a boil and cover with the lid.Turn the heat down and simmer for 20 minutes (the rice should absorb the liquid).
Season with salt and pepper. Garnish with vegan sausage.
