Ingredients
 
 

  • 4 medium potatoes

Potato Baking Glaze

  • 1/2 tbsp olive oil
  • 1/2 tbsp sesame oil
  • 1 tsp cane sugar
  • 1/4 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp smoked paprika
  • 1/4 tsp curry powder
  • 1 pinch black pepper

Salad

  • 2 cups spinach
  • 2 cucumbers
  • 3 scallions

Dressing

  • 1/2 tbsp olive oil
  • 1/2 tsp apple vinegar
  • 1 pinch salt
  • 1 pinch black pepper

Instructions
 

  •  Preheat the oven. Line a baking sheet with a parchment paper.
  •  In a small bowl, mix together olive oil, sesame oil, cane sugar, salt, turmeric, curry powder, smoked paprika and black pepper.
  • Cut potatoes into cubes. Add the olive oil mixture and stir to coat well. Place potatoes cubes in a single layer on the baking sheet.  Bake for 15-20 minutes until ready and golden brown.
  • Chop cucumbers, scallions and spinach. Add to the bowl with the dressing and toss to coat.Top with the potato cubes and pecans. Sprinkle vegan cheese (optional) and serve.
