Mushroom: fresh or dried
Oats: quick rolled oats
Sunflower seeds
Navy beans
Tomatoes
Garlic
Onion: sweet yellow onion
Vegan egg: chia seeds egg
Soy sauce
Vegan oyster sauce
Mustard
Dried sage and thyme
Pepper
HOW TO MAKE VEGAN MEATLOAF
- In a food processor, process mushroom, garlic, tomatoes and onion until minced. In a frying pan, warm olive oil, add onion-mushroom mixture and cook for 5 minutes.
- In a food processor, process oats, sunflower seeds and pecans. Pulse to the size of ground beef. Add navy beans (cooked) and pulse.
- Transfer the bean mixture to a mixing bowl.
- Add onion-mushroom mixture.
- Add vegan egg, soy sauce, vegan oyster sauce, mustard, dried sage and thyme.
- Mix until well combined.
- Press the mixture into prepared pan. Smooth the top.
- Mix all topping ingredients together.
- Sprinkle with topping oats mixture.
- Bake for 30-45 minutes (365F) until top is golden brown.
