A bright colored Corn relish brightens cold winter days. Few people can resist the charms of corn, bell pepper and tomatoes, especially since these dish is versatile and cooks in just minutes.

CORN RELISH INGREDIENTS
Corn: fresh or frozen
Bell pepper: red bell pepper
Cucumber
Cane sugar
Tomatoes: fresh tomatoes
Onion: yellow sweet onion
White vinegar
Old Bay seasoning: you could substitute and experience with different types of spices (celery, cajun pepper, paprika, black pepper and dry mustard)
HOW TO MAKE CORN RELISH
- Dice sweet onion, cucumbers, red bell pepper, tomatoes and cucumber.
- Bring all the ingredients (except tomatoes), to a boil, simmer for 10 minutes.
- Stir in tomatoes, cook for 5 minutes. Remove from heat.
- Cool before serving.
WHAT CAN YOU USE CORN RELISH FOR?
You can use it on sandwiches, hamburgers, tacos, salads or sushi rolls (mix it with vegan mayo and use it as a sushi filling or topping).
