VEGAN STRAWBERRY COOKIES INGREDIENTS
Dough:
Flour: all-purpose flour or pastry flour
Vegan butter
Water
Cane sugar
Vanilla sugar
Salt
Filling:
Strawberries: fresh or frozen
Apple juice
Cane sugar
Cornstarch
Almond extract
HOW TO MAKE STRAWBERRY COOKIES
Dough:
- In a large mixing bowl add the flour; make a well in the center and put in vegan butter(room temperature), cane sugar, vanilla sugar and pinch of salt.
- Working with the tips of the fingers, rub the flour and ingredients together until the mixture forms particles the size of pea.
- Add water (1tbsp at a time). Mix it into the mixture to form a dough. Do not knead.
- Wrap in plastic and refrigerate for 30minutes.
Strawberry filling:
- In a saucepan, combine strawberries and cane sugar. Bring to a boil.
- In a small bowl, stir apple juice, almond extract and cornstarch.
- Stir cornstarch mixture into strawberries. Cook for 5 minutes (the mixture should become glossy).
