Flour: all-purpose flour
Cane sugar
Vegan butter
Vegan egg
Baking powder
Corn syrup

HOW TO MAKE VEGAN UPSIDE-DOWN CAKE
- Preheat the oven. Brush the cake pan with vegan butter and sprinkle with cane sugar.
- In a mixing bowl, combine vegan butter, cane sugar and corn syrup.
- Add vegan egg.
- Zest 2 mandarines. Stir the zest into a batter. Squeeze mandarines and stir juice into the batter.
- Add flour and baking powder.
- Peel the remaining mandarines and cut crosswise into slices (1/2 inch thick).
- Arrange mandarin slices in the pan and pour the batter.
- Bake for 25-30 minutes (365F).
- Let the cake cool to room temperature in the pan, then turn out.
