Ingredients
 
 

  • 1 stick vegan butter (4 oz)
  • 1/3 cup cane sugar
  • 1 tbsp corn syrup
  • 1 vegan egg
  • 3 mandarins
  • 1 cup flour
  • 2 tsp baking powder

Instructions
 

  • Preheat the oven. Brush the cake pan with vegan butter and sprinkle with cane sugar (2tbsp).
  •  In a mixing bowl, combine vegan butter, cane sugar and corn syrup. Add vegan egg. Zest 2 mandarines. Stir the zest into a batter. Squeeze mandarines and stir juice into the batter. Add flour and baking powder.
  • Peel the remaining mandarines and cut crosswise into slices (1/2 inch thick). Arrange mandarin slices in the pan and pour the batter. 
  • Bake for 25-30 minutes (365F). 
  • Let the cake cool to room temperature in the pan, then turn out.
