This is one of the first recipe I make when plums arrive in the farmer’s market. As the cake bakes, the top forms a golden brown crust with a fragrant plums. Serve with cold vegan whipped cream over the top, if desired.

VEGAN PLUM CAKE INGREDIENTS
Flour
Baking powder
Salt
Vanilla sugar
Vegan egg
Cane sugar
Cinnamon
Grape seed oil
Plums: sierra plums
HOW TO MAKE PLUM CAKE
- In a mixing bowl, whisk together flour, baking powder, vanilla sugar and salt.
- Using a food processor, mix together vegan egg, cane sugar and grape seed oil.
- Add the egg mixture to the flour mixture and mix.
- Pour the batter into the prepared pan and spread evenly. Poke the plum (halved and pitted) into the batter, placing them close together. In a small bowl, stir together the cinnamon and cane sugar. Sprinkle over the batter.
- Bake until the top is golden, and tester inserted into the center of the cake comes out clean.
