HOW TO MAKE PASTA SALAD
- Cook pasta until al dente, according to package instructions. Using a stainer, scoop out the pasta ad transfer to a large bowl. Add 1 tsp of olive oil and toss well. Cover and refrigerate.
- Chop cucumbers, radish and spinach.
- In a bowl, whisk together olive oil, vinegar and the garlic. Pour over the pasta, cucumbers, radish and spinach. Add chopped parsley (optional). Toss well. Season with salt and pepper. Serve with vegan patties (optional).
