HOW TO MAKE VEGAN STUFFED ZUCCHINI BOATS
- Preheat the oven 365F.
- Parboil zucchini (boil for about 5 minutes, and drain).
- Cut the zucchini lengthwise, scoop out the pulp and set aside.
- Chop the pulp and set aside.
- Mix zucchini pulp, bread, fresh oregano, vegan egg, salt and pepper.
- Fill the zucchini halves with the mixture and arrange in a baking dish.
- Pour a 1/2 inch of water into the pan and bake for about 20-30 minutes until golden brown (time may vary depending on the oven used).
