EXTRA CREAMY VEGAN RICE PUDDING

This extra creamy vegan rice pudding easy to make and made of cupboard ingredients with arborio rice and has an extra coffee burst of flavor.

HOW TO MAKE VEGAN RICE PUDDING

  1. Bring water (2 cups) to a boil. Add the rice, cook for a few seconds to burst the starch grains, and then drain.
  2. In another large pan, bring the milk to a boil with coffee and the sugar.
  3. Add the rice, stir in the salt, and cook over low heat, until all the milk has been absorbed (stir regularly).

VEGAN RICE PUDDING TIPS

  • Bake the rice pudding in a 350F oven for 20 minutes.
  • You can flavor the milk with citrus zest or vanilla extract.
  • Use soy or almond milk.
  • To make it extra creamy you could use coconut milk (canned).
  • Use arborio rice (if possible). Arborio rice is an Italian high-starch short-grain rice, creamy as you cook it and suitable for risotto and rice pudding.
