HOW TO MAKE VEGAN RICE PUDDING
- Bring water (2 cups) to a boil. Add the rice, cook for a few seconds to burst the starch grains, and then drain.
- In another large pan, bring the milk to a boil with coffee and the sugar.
- Add the rice, stir in the salt, and cook over low heat, until all the milk has been absorbed (stir regularly).
VEGAN RICE PUDDING TIPS
- Bake the rice pudding in a 350F oven for 20 minutes.
- You can flavor the milk with citrus zest or vanilla extract.
- Use soy or almond milk.
- To make it extra creamy you could use coconut milk (canned).
- Use arborio rice (if possible). Arborio rice is an Italian high-starch short-grain rice, creamy as you cook it and suitable for risotto and rice pudding.
