This plant-based banana bread recipe contain pear puree which gives a nice pudding like texture. I’m happy to share with you this recipe for a healthy banana bread, which would no disappoint you.
HOW TO MAKE VEGAN BANANA BREAD
- Preheat the oven 365F.
- In a medium mixing bowl mash the bananas. Set aside.
- In a food processor or blender puree pear until smooth.
- Add pear puree to mashed bananas. Add the wet ingredients to “banana-pear” mixture.
- In a separate bowl sift dry ingredients.
- Add the dry ingredients to the wet ingredients.
- Pour the batter in a greased loaf pan and bake 40-50 minutes until golden brown.
VEGAN BANANA BREAD TIPS
- Use riped bananas, it will give more sweetness and will act as binder, replacing eggs. (you could know more “egg substitutes” tips from Free E-book “Vegan Baking Guide” by signing up to a monthly newsletters)
- Don’t overmix the batter!
- For pear puree you could blend poached pear.
