This Easy Trifle with strawberry and apricot (infused with Earl Grey tea) light dessert is perfect end to an evening meal or just indulge during sunny summer day. This desert can be made in advance and garnish before serving.

TRIFLE INGREDIENTS
Apricots: cut into quarters
Strawberry: halved
Sugar: cane sugar
Earl Grey tea
Vegan Cream
Vanilla Cake: substitute for sponge fingers (cake recipe could be found in this post).
HOW TO MAKE VEGAN TRIFLE
- Put cane sugar and Earl Grey into a pan with apricot quarters. Bring to the boil and simmer for 5-10 minutes.
- Remove the fruit and leave to cool. Leave the tea to cool.
- Soak the sponge cake in the tea and use it as a base layer. Cover the sponge with infused apricots and strawberries.
- Spoon whipped cream over the top of the fruit.
TRIFLE TIPS
- Make trifle in advance, however top it with a whipped cream just before serving
- Use a strong tea
