Flour: all-purpose flour
Cacao powder: Dutch-process
Baking powder
Vegan egg
Cane sugar
Vegan butter
Confectioners’ sugar
HOW TO MAKE VEGAN CHOCOLATE COOKIES
- In a bowl, sift the flour, baking powder, cocoa powder and salt.
- In a separate bowl, beat together vegan butter and cane sugar (using a hand mixer) until fluffy.
- Add vegan egg and vanilla extract.
- Add the flour mixture and beat on low for 3-5 minutes until combined.
- Place confectioner’s sugar in a small bowl. Scoop up a tablespoon of the dough, roll between your palms into a ball.
- Roll in confectioner’s sugar and place on prepared baking sheet (flatten each ball with the palm of your hand).
- Bake for 10-15 minutes (365F).
