VEGAN JAFFA CAKES DESSERT

This vegan dessert (inspired by Jaffa Cakes) is a combination of vanilla sponge cake, dairy-free cheesecake mousse, orange jelly and chocolate glaze.

VEGAN JAFFA CAKES DESSERT INGREDIENTS 

VANILLA CAKE INGREDIENTS

Flour: you can use gluten-free flour 

Cane Sugar 

Baking soda 

Baking powder: homemade baking powder recipe could be found in this post.  

Canola Oil 

Xanthan gum 

Plant milk 

Apple cider vinegar 

Vanilla extract

ORANGE JELLY INGREDIENTS 

Orange marmalade: homemade or store-bought 

Agar-agar powder 

HOW TO MAKE JAFFA CAKES 

VANILLA CAKE LAYER 

  1. Sift and whisk together the flour, sugar, xanthan gum baking soda, baking powder and salt.
  2. In a separate bowl place the plant milk, vanilla and vinegar whisking to blend completely. 
  3. Pour the wet mixture into the dry and mix until batter is smooth. 
  4. Pour the mixture into a baking sheet and bake 365F 25-30 minutes until the top of the cake is ready and set.
  5. Let cool completely. Cut out into rounds using a cookie cutter.

VEGAN MOUSSE LAYER 

  1. Beat the cream cheese, add agar-agar mixture (mix agar-agar with cream), yogurt and lemon juice.
  2. Pour the filling into a vanilla cake layer. Chill 4-5 hours. 

ORANGE JELLY LAYER 

  1. In a saucepan, add orange marmalade and cook over a low heat. 
  2. Add agar-agar powder. Let it cook for 5 minutes. 
  3. Let it cool for 3 minutes and pour the mixture into a cheesecake mousse layer. Chill for 1 hour. 

CHOCOLATE GLAZE 

  1. Melt chocolate chips. Pour melted chocolate on the top of each dessert. Chill for 30 minutes.

Ingredients
  

Vanilla Cake

  • 1 1/2 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp xanthan gum
  • 1/2 cup cane sugar
  • 3/4 cup plant milk
  • 1/2 cup canola oil
  • 2 tbsp vinegar
  • 1 tsp vanilla extract

Cheesecake Mousse

  • 160 g vegan cream cheese
  • 60 g vegan yogurt
  • 200 g vegan cream
  • 2 tsp agar-agar powder
  • 10 g lemon juice

Orange Jelly

  • 1 cup orange marmalade
  • 1 tsp agar-agar powder

Chocolate Glaze

  • 1 cup chocolate chips

Instructions
 

Vanilla cake
