This vegan dessert (inspired by Jaffa Cakes) is a combination of vanilla sponge cake, dairy-free cheesecake mousse, orange jelly and chocolate glaze.

VANILLA CAKE INGREDIENTS
Flour: you can use gluten-free flour
Cane Sugar
Baking soda
Baking powder: homemade baking powder recipe could be found in this post.
Canola Oil
Xanthan gum
Plant milk
Apple cider vinegar
Vanilla extract
ORANGE JELLY INGREDIENTS
Orange marmalade: homemade or store-bought
Agar-agar powder
HOW TO MAKE JAFFA CAKES
VANILLA CAKE LAYER
- Sift and whisk together the flour, sugar, xanthan gum baking soda, baking powder and salt.
- In a separate bowl place the plant milk, vanilla and vinegar whisking to blend completely.
- Pour the wet mixture into the dry and mix until batter is smooth.
- Pour the mixture into a baking sheet and bake 365F 25-30 minutes until the top of the cake is ready and set.
- Let cool completely. Cut out into rounds using a cookie cutter.
VEGAN MOUSSE LAYER
- Beat the cream cheese, add agar-agar mixture (mix agar-agar with cream), yogurt and lemon juice.
- Pour the filling into a vanilla cake layer. Chill 4-5 hours.
ORANGE JELLY LAYER
- In a saucepan, add orange marmalade and cook over a low heat.
- Add agar-agar powder. Let it cook for 5 minutes.
- Let it cool for 3 minutes and pour the mixture into a cheesecake mousse layer. Chill for 1 hour.
CHOCOLATE GLAZE
- Melt chocolate chips. Pour melted chocolate on the top of each dessert. Chill for 30 minutes.
