VEGAN PUMPKIN CHOCOLATE CHIP COOKIES INGREDIENTS
Flour: all-purpose flour
Baking powder
Vegan butter
Icing sugar
Vegan egg
Cane sugar
Pumpkin puree: homemade puree (recipe could be found here).
HOW TO MAKE PUMPKIN COOKIES
- Place the vegan butter in a bowl and mix with cane sugar. Add icing sugar.
- Add vegan egg and mix.
- Add the flour, baking powder and salt. Mix well.
- Add pumpkin puree and chocolate chips.
- Lay a sheet of cling film on work surface and place the dough on top.
- Wrap the dough and roll into a log. Refrigerate overnight.
- The next day, preheat the oven 365F.
- Remove the cling film and use the knife to cut the cookies dough into rounds.
- Bake cookies for 15-20 minutes (365F) until ready.
