Pumpkin chocolate chip cookies

An ideal vegan treat, these cookies are also welcome sight for anyone who craves pumpkin and chocolate. For a more intense flavor, add chai spices into cookies dough.

Ingredients
 
 

  • 2 cups flour
  • 1/4 cup vegan butter
  • 1 vegan egg
  • 1/2 cup cane sugar
  • 1/3 cup icing sugar
  • 1/4 cup pumpkin puree
  • 1/2 cup chocolate chip
  • 1 pinch baking powder
  • 1 pinch salt

Instructions
 

  •  Place the vegan butter in a bowl and mix with cane sugar.
  • Add icing sugar.
  • Add vegan egg and mix. 
  • Add the flour, baking powder and salt. Mix well. 
  • Add pumpkin puree and chocolate chips. 
  • Lay a sheet of cling film on work surface and place the dough on top. Wrap the dough and roll into a log. Refrigerate overnight. 
  • The next day, preheat the oven 365F.
  • Remove the cling film and use the knife to cut the cookies dough into rounds. 
  • Bake cookies for 15-20 minutes (365F) until ready.
