An ideal vegan treat, these cookies are also welcome sight for anyone who craves pumpkin and chocolate. For a more intense flavor, add chai spices into cookies dough.

2 cups flour 1/4 cup vegan butter 1 vegan egg 1/2 cup cane sugar 1/3 cup icing sugar 1/4 cup pumpkin puree 1/2 cup chocolate chip 1 pinch baking powder 1 pinch salt
Place the vegan butter in a bowl and mix with cane sugar.
Add icing sugar.
Add vegan egg and mix.
Add the flour, baking powder and salt. Mix well.
Add pumpkin puree and chocolate chips.
Lay a sheet of cling film on work surface and place the dough on top. Wrap the dough and roll into a log. Refrigerate overnight.
The next day, preheat the oven 365F.
Remove the cling film and use the knife to cut the cookies dough into rounds.
Bake cookies for 15-20 minutes (365F) until ready.
