Sift and whisk together the flour, sugar, xanthan gum baking soda, baking powder and salt.In a separate bowl place the plant milk, vanilla and vinegar whisking to blend completely. Pour the wet mixture into the dry and mix until batter is smooth. Pour the mixture into a baking sheet and bake 365F 25-30 minutes until the top of the cake is ready and set.Let cool completely. Cut out into rounds using a cookie cutter.
Vegan Mousse
Beat the cream cheese, add agar-agar mixture (mix agar-agar with cream), yogurt and lemon juice.Pour the filling into a vanilla cake layer. Chill 4-5 hours.
Orange Jelly
In a saucepan, add orange marmalade and cook over a low heat. Add agar-agar powder. Let it cook for 5 minutes. Let it cool for 3 minutes and pour the mixture into a cheesecake mousse layer. Chill for 1 hour.
Chocolate Glaze
Melt chocolate chips. Pour melted chocolate on the top of each dessert. Chill for 30 minutes.
