These crinkle type vegan chocolate cookies are crowd-pleaser. Using room temperature ingredients ensures that the dough comes together evenly.

Ingredients
 
 

  • 1 2/3 cups flour
  • 1/2 cup cacao powder
  • 1 tsp baking powder
  • 1 pinch salt
  • 1/2 cup vegan butter
  • 1 cup cane sugar
  • 1 vegan egg
  • 1 tsp vanilla extract
  • 3 tbsp confectioner's sugar

Instructions
 

  • In a bowl, sift the flour, baking powder, cocoa powder and salt.
  •  In a separate bowl, beat together vegan butter and cane sugar (using a hand mixer) until fluffy. Add vegan egg and vanilla extract. Add the flour mixture and beat on low for 3-5 minutes until combined. 
  • Place confectioner's sugar in a small bowl.
  • Scoop up a tablespoon of the dough, roll between your palms into a ball. Roll in confectioner's sugar and place on prepared baking sheet (flatten each ball with the palm of your hand).
  •  Bake for 10-15 minutes (365F).
