These Italian Christmas Cookies is oil free, vegan, soft, chewy traditional Neapolitan cookies Mostaccioli. These cookies have been around for centuries and the name come from mosto (must).
MOSTACCIOLI INGREDIENTS:
Flour
Baking powder: store bought or homemade (homemade recipe could be found here)
Cane Sugar
Almond flour: try to use almond flour in these recipe instead of almond mill
Dutch process cacao powder: it will give more intense chocolate color and aroma
Maple Syrup: you can use maple syrup or corn syrup
Apricot Jam: store bought or homemade
Spices: cinnamon, all spice, nutmeg and cloves

Italian Christmas Cookies Mostaccioli
Ingredients
- 4 cups flour
- 1 tsp baking powder
- 1 cup cane sugar
- 1 cup almond flour
- 1/4 cup cacao powder
- 1/4 cup maple syrup
- 100 g apricot jam
- 3/4 cup water
- 1 tsp spice mix
Instructions
- In a large bowl combine all the ingredients together. Form into a ball, leave to chill for 24 hrs (cover with plastic).
- Preheat the oven 365F.
- On a lightly floured surface roll out the dough. Cut with a cookie cutter.
- Place cookies on a tray (lined with a parchment paper).
- Bake 15-20min.
Notes
- You can glaze your cookies with chocolate. For the topping: 200 g chocolate, melt in a bowl over simmering water.
