These oatmeal cookies is gluten-free and made with quick oats and almond flour.
HOW TO MAKE OATMEAL COOKIES
- In a mixing bowl, stir together oats, almond flour, baking powder, coconut, coconut sugar and salt.
- Add raisins and pecans (optional).
- Beat aquafaba to soft peaks, add peanut butter and coconut oil.
- Add wet ingredients to dry ingredients and mix until combined.
- Preheat the oven 365F.
- Form cookies on a baking sheet.
- Bake 10-15 minutes until golden brown.
