A bright colored Corn relish brightens cold winter days. Few people can resist the charms of corn, bell pepper and tomatoes, especially since these dish is versatile and cooks in just minutes.

Ingredients
  

  • 1 cup corn
  • 1 medium cucumber
  • 1 red bell pepper
  • 3 tbsp cane sugar
  • 1 tbsp Old Bay seasoning
  • 1/2 cup white vinegar

Instructions
 

  • Dice sweet onion, cucumbers, red bell pepper, tomatoes and cucumber. 
  • Bring all the ingredients (except tomatoes), to a boil, simmer for 10 minutes. 
  • Stir in tomatoes, cook for 5 minutes.
  • Remove from heat. Cool before serving.
