A simple recipe for a sweet, mustard-infused relish makes a perfect complement to any dish.

SWEET RELISH INGREDIENTS 

Cucumbers

Bell pepper

Onion

Cane sugar

Salt

Mustard seed

Peppercorns

White vinegar 

Water

HOW TO MAKE SWEET RELISH 

  1. Chop cucumbers, onion and pepper in a food processor. 
  2. Combine processed cucumber mixture in a mixing bowl, sprinkle with the salt and cover with water. 
  3. Let stand for 3 hours.
  4. Drain, rinse and drain the mixture.
  5. In a large saucepan combine vinegar, water, sugar, mustard seeds and pepper.  Bring to a boil. 
  6. Add vegetables and simmer for 10-15 minutes. 
  7. Pack in a jars. Let it cool completely before store in the refrigerator.

Ingredients
  

  • 3 medium cucumbers
  • 1/2 yellow bell pepper
  • 1/4 bulb onion
  • 1 tbsp salt
  • 1 tsp mustard seed
  • 1/4 tbsp peppercorns
  • 3 tbsp cane sugar
  • 1 cup water
  • 1/2 cup white vinegar
