These Tarte Tatin recipe is a vegan version of a French classic made with fresh apples and egg-free dough.

VEGAN TARTE TATIN INGREDIENTS:
Fresh Apples

For the pastry dough:
Flour
Vegan Butter
Aquafaba
HOW TO MAKE UPSIDE-DOWN APPLE TART:
- Take a large cake pan. Use 3 tbsp (50g) of batter to batter pan and sprinkle 1/4 cup (50 g) of cane sugar.
- Pell and core the apples, cut them into quarters.
- Arrange apple quarters tightly on the bottom of the cake pan. Brush with melted butter (1 tbsp) and sprinkle with the rest of cane sugar.
- Cook for 20-30minutes (360F) until caramelized (light brown).
- In a large mixing bowl add flour, vegan butter, aquafaba (whipped to soft peeks) and pinch of salt.
- Work the ingredients together till soft dough.
- Roll out the dough.
- Preheat the oven 360F.
- Transfer and place the dough over the top of apples (tuck the edges inside).
- Bake 360 F for 20-30 minutes (it should be golden brown).
- Once ready, turn the upside-down cake out onto a cake platter (on these stage you should be very careful because it’s hot and there’s hot caramel sauce on the bottom of cake pan).
- Serve warm.
