These Tarte Tatin recipe is a vegan version of French classic made with fresh apples and egg-free dough.

Ingredients
 
 

  • 3 lb apple
  • 7 tbsp vegan butter
  • 1/3 cup cane sugar

Dough

  • 1 1/4 cup flour
  • 5 tbsp vegan butter
  • 1/4 cup aquafaba
  • salt

Instructions
 

  • Take a large cake pan. Use 3 tbsp (50g) of batter to batter pan and sprinkle 1/4 cup (50 g) of cane sugar.
  • Pell and core the apples, cut them into quarters. Arrange apple quarters tightly on the bottom of the cake pan.

  • Brush with melted butter (1 tbsp) and sprinkle with the rest of cane sugar.Cook for 20-30minutes (360F) until caramelized (light brown).
  • In a large mixing bowl add flour, vegan butter, aquafaba (whipped to soft peeks) and pinch of salt.
  • Work the ingredients together till soft dough.
  • Roll out the dough.
  • Preheat the oven 360F.
  • Transfer and place the dough over the top of apples (tuck the edges inside).Bake 360 F for 20-30 minutes (it should be golden brown).

  • Once ready, turn the upside-down cake out onto a cake platter (on these stage you should be very careful because it's hot and there's hot caramel sauce on the bottom of cake pan).
  • Serve warm.
