Take a large cake pan. Use 3 tbsp (50g) of batter to batter pan and sprinkle 1/4 cup (50 g) of cane sugar.
Pell and core the apples, cut them into quarters. Arrange apple quarters tightly on the bottom of the cake pan.
Brush with melted butter (1 tbsp) and sprinkle with the rest of cane sugar.Cook for 20-30minutes (360F) until caramelized (light brown).
In a large mixing bowl add flour, vegan butter, aquafaba (whipped to soft peeks) and pinch of salt.
Work the ingredients together till soft dough.
Roll out the dough.
Preheat the oven 360F.
Transfer and place the dough over the top of apples (tuck the edges inside).Bake 360 F for 20-30 minutes (it should be golden brown).
Once ready, turn the upside-down cake out onto a cake platter (on these stage you should be very careful because it's hot and there's hot caramel sauce on the bottom of cake pan).
