These Vegan Lemon Bars are one of the easiest and healthy dessert to make and with zesty flavor! It is made of simple ingredients and could be served after a heavy meal.

HOW TO MAKE VEGAN LEMON BARS:
Vegan lemon bars made of shortbread crust and filling.
To make the shortbread crust: in a food processor, pulse the ingredients until crumbly. Press into prepared pan. Bake for 15-20 minutes.
To make the filling: in a bowl, whisk milk(1/2cup), cornstarch and flour. In a medium saucepan combine milk (1/2cup), lemon juice and sugar. Bring to boil. Reduce the heat and slowly whisk the cornstarch mixture. Cook for about 5 minutes (whacking continuously). Remove from heat and stir lemon zest (at these stage you could add food coloring, if using).
To make the lemon bars: pour the filling over the crust and bake for 10-15 minutes. Let cool, then chill in the refrigerator overnight.
VEGAN LEMON BARS TIPS:
- Make lemon bars in advance (it will need to be chilled overnight).
- Cornstarch quantity may vary (you will need to achieve pudding like consistency).
- You could use tapioca starch or arrowroot instead of cornstarch, however quantity may vary (you will need to achieve pudding like consistency).
- You any plant-based milk for the filling.
