This recipe is a perfect combination of banana bread and french toast. It is a great way to use leftover banana bread) and you will ended up with a delicious dish.

Now typically, for French toast you will need eggs and milk, however, these French toast will make it vegan by using aquafaba as egg-substitute and soy milk (plant-based milk).

To create these Vegan Banana Bread French Toast I’ve top it with poached pear, coconut sugar and some cinnamon.

HOW TO MAKE VEGAN BANANA BREAD FRENCH TOAST

  1. Blend all the ingredients together.
  2. Place slice of banana bread into the batter, flip and let sit for about a minute. Place the slice into the pan and let cook until edges start to lightly brown.
  3. Top it with poached pear, coconut sugar and cinnamon.

  • 1 tbsp tapioca starch
  • 1 pear
  • 4 slices banana bread
