Today I would like to share a vegan chocolate hidden poached pear cake to celebrate New Year. These cake with perfectly poached pear, rich chocolate sponge, very moist and chewy.
CHOCOLATE HIDDEN PEAR CAKE INGREDIENTS:
Flour: all-purpose, type 00, gluten-free or pastry
Pears
Cane sugar
Baking powder: store bought or homemade (homemade recipe could be found here)
Dutch processed cacao
Vegan yoghurt
Canola oil
Orange Zest

Chocolate Hidden Pear Cake
Ingredients
Poached Pear
- 3 pears
- 650 ml water
- 1/2 lemon juice
- 1 tsp vanilla extract
Batter
- 2 vegan eggs
- 125 g vegan yoghurt
- 50 g canola oil
- 50 g cane sugar
- 20 g cacao powder
- 1 tsp baking powder
- 1 orange zest
- 1 tsp vanilla extract
- 1 pinch salt
- 1/4 cup chocolate nibs
Instructions
Poached Pear
- Add all the ingredients to a large pot. Add pears and simmer until they tender but sill firm.
- Remove the pears from the liquid and set aside.
Cake
- Preheat the oven 365F. Sprinkle cacao powder on a 900g loaf pan .
- Sift flour, cacao powder, baking powder and set aside. Pour the wet ingredeints into a flour mixture.
- Pour the mixture into the prepared pan. Place the pears in the batter, gently pushing them. Brush the pears with white corn syrup. Bake the cake for 30-45min., or until a toothpick inserted into the center cames out clean.
- Let the cake cool for 20 min before taking from the pan to cool completely.
