FOR THE CRISP
Oats
Flour: all-purpose flour
Cane sugar
Baking powder
Coconut oil
Coconut milk
Cinnamon
Salt
For the filling:
Apples: you could choose Gala
Cane sugar
Cranberries (optional)
Coconut oil
Vanilla extract
HOW TO MAKE VEGAN CRISP
- In a saucepan, combine apples (peeled and sliced) and coconut oil. Cook over medium heat for 5 minutes. Add cranberries, cane sugar and vanilla extract. Cook over low heat for 5-10 minutes. Remove from the heat.
- In a mixing bowl, add oats, cane sugar, baking powder, flour and pinch of salt. Add coconut oil and coconut milk. Stir the mixture.
- Sprinkle half of the mixture over the bottom of the prepared pan. Spread the apple mixture evenly.
- Add cinnamon to the remaining oat mixture. Sprinkle the mixture over apples.
- Bake for 30-35 minutes (365F) until the top and edges are golden brown.
