A warm Apple Crisp brings comfort, sending wafts of cinnamon through the kitchen. The classic topping of crunchy oats gets a boost of coconut flavor from coconut milk and oil.
In a saucepan, combine apples (peeled and sliced) and coconut oil. Cook over medium heat for 5 minutes. Add cranberries, cane sugar and vanilla extract. Cook over low heat for 5-10 minutes. Remove from the heat.
In a mixing bowl, add oats, cane sugar, baking powder, flour and pinch of salt. Add coconut oil and coconut milk. Stir the mixture. Sprinkle half of the mixture over the bottom of the prepared pan. Spread the apple mixture evenly. Add cinnamon to the remaining oat mixture. Sprinkle the mixture over apples.
Bake for 30-35 minutes (365F) until the top and edges are golden brown.
