These Vegan Lemon Bars are one of the easiest and healthy dessert to make and with zesty flavor! It is made of simple ingredients and could be served after a heavy meal.
In a food processor, pulse the ingredients until crumbly. Press into prepared pan. Bake for 15-20 minutes.
Filling
In a bowl, whisk milk(1/2cup), cornstarch and flour.
In a medium saucepan combine milk (1/2cup), lemon juice and sugar. Bring to boil. Reduce the heat and slowly whisk the cornstarch mixture. Cook for about 5 minutes (whacking continuously).
Remove from heat and stir lemon zest (at these stage you could add food coloring, if using).
Vegan Lemon Bars
Pour the filling over the crust and bake for 10-15 minutes. Let cool, then chill in the refrigerator overnight.
Once chilled, cut into squares and dust with powdered sugar.
